Crispy Chicken Thigh Supper: Instant Pot and Air Fryer Combo
In this recipe I turned near-expired veggies and combined them with beautiful chicken thighs to make a Crispy Chicken Thighs Recipe in the Instant Pot and Air Fryer. With hectic lives, we often end up with bits of this and that in the veggie drawer so I hope this helps give you some ideas on how to use the Instant Pot combined with an Air Fryer to reduce food waste by using the ingredients you might have otherwise thrown away. This is an amazing one-pot meal and a regular in our house.

Crispy Chicken Thigh One Pot - Instant Pot and Air Fryer Combo
Ingredients
- 1 tbsp olive oil
- 4 chicken thighs (bone in, skin on)
- Half a punnet of cherry tomatoes
- 4 potatoes halved or enough new potatoes for 4
- 1/2 a red pepper
- 1 onion
- 1 heaped tsp dijon mustard
- 1 heaped tsp of wholegrain mustard
- 1/2 a lemon, juiced
- 1 tsp honey
- 1 tsp herbes de provence
- 2 cloves garlic
- 1 to 1.5 cups of apple juice or stock
- 1/d a head of broccoli florets only
